Artichokes are a hidden treasure. Usually tucked away in spinach dip, they never get the top billing. But this delicious veggie, which is actually a flower bud, has lots of great qualities. The artichoke is a great source of fiber which is low in calories and fat. It can help prevent colon cancer and reduce cholesterol. With minerals like copper, potassium and iron along with Vitamin C, it is a healthy addition to any meal.

Picking and artichoke should be done when the petals are just starting to open. This is a vegetable that is best harvested in the spring, but they can be found year-round. The heart is the main part of the veggie that gets eaten.

Artichokes are delicious plain, dipped in sauce, with vegetables or even stuffed.
